Today, the fruit and nut snack I’m presenting involves some really basic steps that anyone can follow. You won’t need special cooking skills, other than melting chocolate, so you have no excuse. The filling part is probably the only time you need to focus a little more. I try not to make a mess, but let’s be honest, I always end up with more peanut butter on my fingers than in the raspberries. But even so, the taste is quite impressive, and after trying one, you won’t be able to stop. I can assure you that one leads to another.

How to prepare the raspberry chocolate truffles
Wash the raspberries and stuff them with some peanut butter. You will find it easier if you use a teaspoon and pay attention to the fruit’s texture. Raspberries are usually very delicate and you don’t want to break them while stuffing them with nut butter.
Proceed with melting the chocolate and for this you have two options:
– water bath : Fill a pot with some water and bring it to a boil. Then add the chocolate chips to a heatproof bowl and place it over the pot ( the bowl should not touch the water). Now stir the chocolate while it is melting, but be careful that the water is not boiling too vigorously.
-microwave : Fill a bowl with the chocolate chips and heat in 15-20 second intervals. Between every interval, stir the chocolate with a spoon or spatula. Repeat until the chocolate is completely melted.
Cover the raspberries with melted chocolate and grated coconut.
Let the raspberries cool down in the freezer for at least 1 or 2 hours.
My tips for the frozen raspberries chocolate bites recipe
- It is preferable to use dark chocolate because raspberries are already sweet.
- Peanut butter can be substituted with almond butter, the result will be just as delicious.
- You can store the raspberries in the fridge, instead of the freezer, but in this case their shelf life will decrease so you want to be sure that all the raspberries are eaten within 5 days approximately.
- You can replace raspberries with blackberries or also dates cut in half. The only requirement is to have a fruit that can be filled.
- Covering raspberries with chocolate and coconut without making a mess is not that easy, believe me. For this, I suggest doing this step on a temporary plate, not the one you will put in the freezer. Then, once fruits are coated, use a toothpick to transfer them to another tray and let them cool down.
- Filling raspberries with peanut butter that is too runny can be difficult, especially in the summer heat. This can complicate the next steps of covering. To make the recipe easier, try refrigerating the nut butter for about 10 minutes.

150 gr ( ⅔ cup) dark chocolate chips
Peanut Butter (as needed to fill the raspberries)
10 gr ( 2 teaspoons) Olive Oil
